Dried Basil
Fresh or dried basil is used in cooking to flavour Italian, Mediterranean and Thai dishes. The leaves when dried have a peppery taste. Fresh leaves can be used in tomato and pesto sauces. It is good with veal, lamb, fish, poultry, white beans, pasta, rice, soups, vegetables, tomatoes, chesse and eggs. It is also used in vinegar and for tea.
Dried basil is used for its fragrance in pot pourris and sachets. Its is also used in herbal bath mixtures and to add lustre to the hair. Keep in a pot on a windowsill to deter flies. Crushed leaves rubbed on your skin will repel mosquitoes.
