It is well known for its culinary miracles and the myths surrounding the herb as being used to ward off evil spirits and nightmares.

This versatile herb can be used in sweet AND savoury dishes… The world’s your oyster when it comes to our Rosemary! Mix into lemon cake recipes and homemade shortbread with a little grated orange rind. Season chicken, fish and lamb and enhance the flavour of tomato-based soups and sauces. Create excellent herbal vinegars and oils at home and use as a homemade salad dressing or marinade.

  • Dried or fresh leaves may be used to flavour poultry, fish, lamb, pork, beef, veal, casseroles, tomatoes, mushrooms, rice, cheese, eggs, potatoes, vinegars and herbal butters. If you find the leaves somewhat tough, then infuse them in a little warm water and add the liquid rather than a branch.

  • The aromatic oil is added to soaps, creams, lotions, perfumes and toilet water. Use the leaves in sachets and pot pourris. Use an infusion in the final rinse of a hair wash, especially if you have dark hair, to make it shine. Scatter the stems on a barbecue to discourage insects.
